Guess what? It’s Sunday! And it means that I have another recipe for you!
There are days in all of our lives when we just want something sweet, chocolatey and quick. And by quick, I mean that you don’t want to find a recipe, look through your fridge and pantry and realize that you have to go to the store (again!) because you’re missing something. Or, spend time baking all day because well, you need your fix right here, right now.
Well, this cookie recipe, which is called Tinginys in Lithuanian (literally means a lazy man), might do the trick for you. There are only four ingredients, prep takes minutes and it is ready to eat in no time!
I usually have a story that I share along with my recipes but this one has no particular story associated with it. Tinginys is something every Lithuanian knows and I think this might just be one of the first recipes that anyone learns to make in the kitchen. It took me some time to find the right cookies in America for it because we usually have a certain brand in Lithuania that we use. But I did it! And, trust me, it tastes just as good.
So without further ado, introducing the Tinginys, or the Lazy Man’s cookie!:)
Ingredients
2 packages of tea bisquits
1 can of sweetedned condensed milk
5 tbsp of cocoa (the darker the better)
1 stick of butter
Here are the products I used but you can use whatever brand you prefer. Just remember, the cookies similar to tea cookies are preferable because they make nice chunks when crumbled.
Preparation
In a large bowl, crumble the cookies and set aside.
In a pot, melt butter on slow simmer, add in the can of sweetened condensed milk and gradually mix in the five tablespoons of cocoa. Keep mixing until there are no bubbles and it starts to simmer.
Pour the mixture over the cookies and combine well.
Cover a loaf pan with wax paper and pour (it will be rather thick) the cookie and cocoa mixture in it. Shape it. I just took a ziploc bag and made it look like a loaf of bread.
Put the pan in the refrigerator and let it sit there for at least an hour.
When it is solidified, take it out, cut it into pieces of any size and serve.
