Honeydew Blackberry Super Salad

There are two things that I want to tell you before I dive into the recipe of this wonderful honeydew blackberry super salad. First, how I came about it, and second, how I thought I would present it.

Life goes in cycles and I have noticed that every year around New Years, or sometimes a month later, in February, I begin to feel restless from being cooped up inside and cannot stop eating everything and anything in sight out of boredom and of course, to keep warm. So last year on one boring day I was scrolling down Facebook and a name Betty Rocker caught my attention. It was one of those sponsored Facebook ads which said “Free 30 Day Challenge”. Challenge, shmallenge, I thought. I’ve done a few ones that you had to print out instructions, then you forgot, then it was boring  – you get the picture. But it said “free” and didn’t say what part of the body it was focusing on, so I thought why not?

To make a long story short, led by curiosity and total desperation to feel pretty/good/healthy/you-name-it again, I checked out that challenge. It turned out to be more than I ever hoped it would be (and yes, I stuck out the entire 30 days!) so when I finished it I went on and got another, more comprehensive exercise program from her.

I think there are a few factors why I stuck with Betty Rocker.

  • I am very motivated and sometimes dream of going to the gym, but my schedule is hectic so home workout in the morning is a total win for me.
  • I get bored easily and she delivers to people like me – no exercise routine is the same. 
  • She is funny and allows you to embrace your human side with all of your chocolate-craving flaws
  • She explains the logic behind the moves in exercises, encourages you to take a day off, teaches stretching and motivates with kind words.
  • She has a blog, where she shares good-for-you recipes that are to die for, really.

And that blog is where the salad that I am about to share comes from.

Moving into the second part of this post, i.e. how I thought I would present this, will hopefully make you smile.

Remember the St.Patty’s Day Rainbow video that I made a couple of weeks ago? Yeah, so after that I felt really pumped and figured if I can make one video, I must be a pro. I texted my sister and asked her to start working on another piece of music, I began planning out my actions, checked the lighting and the props… After all, I write about food, take pictures, how difficult can it be to make another video?

Hahahahaha! Well, if you have more than three ingredients, a few of which require mixing, one of them is more sticky than others and one has to be scooped out – yea, not for a rookie foodie video maker.

I prepared all the ingredients and placed them in separate tiny dishes. I cut the honeydew melon in half, took the frozen raspberries and started thawing them. Ready, set, film! Everything was going semi-ok, seeing as I couldn’t figure out where to put the used tiny dishes after I’ve poured their contents into the bowl. Focused and determined, I continued preparing the dressing on the video until my husband walked by and started talking: “Whatcha doing?”, he asked. I tried to wave him off but he kept going in a loud whisper: “Oh, oh, I see, I will not interrupt you then” and yelled loudly to the kids who were upstairs, then made a few other noises at which point I crumbled and started laughing.

You say: “But you can edit this out of the video!” And you are right. But not when you decide to go on with it and start making the second part of the salad only to realize that you forgot to press the “record” button. And after that you are out of ingredients:)

So…. In the end, I took pictures. And the salad was gone in two seconds – glad I could take a bite while I was making it…

Honeydew Blackberry Super Salad
Ingredients
  • 1/4 cup flaxseed oil
  • 1 tbsp apple cider vinegar
  • 2 tsp honey
  • 1/4 tsp salt
  • 1 orange, zested and juiced
  • 1 half honeydew melon chunks
  • 1 tbsp fresh mint leaves
  • 1 cup blackberries
Instructions
  1. Mix the ingredients for the dressing:

    In a small bowl whisk the flaxseed oil, apple cider vinegar, honey, salt and orange zest and juice together until combined well.

    In a large bowl, add the honeydew melon chunks and blackberries and pour the dressing over them. 

    Garnish with mint.


Recipe Notes

Fresh blackberries would be great, bet I used frozen. You just need to slightly thaw them, so they are not so hard because trust me, they will not have time to thaw out before you gobble this deliciousness up.
