Nothing screams weekend more than homemade waffles. The minute you realize that you want waffles for breakfast (or somebody demands them:) the beautiful feeling washes over you. Aaaahhh, knowing that you can wake up on your own time, enjoy your cup of coffee for much longer than 5 minutes and actually take pleasure in making the breakfast deliciousness!
We used to buy frozen waffles at a supermarket and they were pretty good. But, as with all things in a house full of boys, even a large box of waffles lasted a day, at most. Then for a while, we lived without them, I cannot even remember why. Until the day I bought the waffle maker . How could I live without it all these years?! No clue. But I know I cannot go back to those waffle maker-free days.
I usually make pancakes one day of the weekend, so keeping that tradition and adding homemade waffles into it was awesome. At first, I followed the simple recipe that came with the waffle maker and that seemed to please everyone. Adding a few blueberries or chocolate chips here and there made it even more crave-worthy. But to me, there was something missing. The waffles were good, but eating them without any berries, honey or syrup was meh.
Last month, as I was visiting one of my friends, she asked me: “Would you like to try some waffles? I made some this morning!” Sure, I said. Boy, was it a revelation that not all waffles are made equal. She peaked my attention when she said it was made with small curd. I know we have difficulty finding curd the way it is made in Lithuania here, so we tried to brainstorm ideas of what we can replace it with. Enter Ricotta cheese. You probably know my fascination with ricotta cheese from a recipe I already posted, right?:) So needless to say, anything that incorporates it, is great in my book.
Another ingredient that I haven’t encountered much in recipes around here was kefir – a plain buttermilk like yogurt. When I discovered Lifeway Kefir a few years ago, I was thrilled by the familiarity of taste and texture. It reminded me of my childhood – a refreshing drink on a hot summer day and an unexpectedly fantastic remedy for bad sunburn (yep, no aloe vera for us Lithuanians:)
So the next weekend, when the kids woke up and started wondering if we should make waffles or pancakes, I suggested to make two batches – one that we are used to and one that I had just learned about. We had a family vote and I bet you already know which one won:)
A delicious addition to your weekend breakfast repertoire.
- 2 cups ricotta cheese whole milk
- 3 eggs
- 4 tbsp sugar
- 1/2 cup Lifeway Kefir plain
- 3 tbsp butter
- 1/2 cup flower
- 1 1/2 tsp baking powder

Combine ricotta cheese, eggs, sugar and kefir. Mix well.

Melt the butter and pour it into the ricotta cheese mixture.

Combine flour and baking powder and add to the ricotta cheese mixture. The batter will be somewhat thick.

Heat the waffle maker and pour the batter to make waffles.

Result: the airiest, softest and moistest waffles you’ve ever had. The best part, you don’t even need any addition - berries, or syrup - to enjoy them.
